  • 2 cups (250g) all-purpose flour
  • 1/3 cup (67g) granulated sugar
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 2 large eggs, room temperature
  • 2/3 cup (160ml) milk
  • 2 tablespoons (28g) unsalted butter, melted
  • 2 teaspoons vanilla extract
  • 2 cups (about 2 medium) apples, peeled and diced small
  • 1 tablespoon lemon juice
  • 2 cups (240g) powdered sugar
  • 34 tablespoons milk or cream
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Toss peeled and diced apples with lemon juice in a small bowl and set aside.
  3. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, salt, and nutmeg.
  4. In a separate bowl, whisk eggs, then add milk, melted butter, and vanilla extract until well combined.
  5. Pour wet ingredients into dry ingredients and gently fold together until just combined.
  6. Fold in the diced apples, ensuring they’re evenly distributed throughout the batter.
  7. Drop 1/4-cup portions of batter onto the prepared baking sheet, spacing them 2 inches apart.
  8. Flatten each mound slightly with the back of a spoon.
  9. Bake for 18-22 minutes until golden brown and a toothpick inserted comes out clean.
  10. While fritters bake, whisk together powdered sugar, milk, vanilla, and salt to make the glaze.
  11. Let fritters cool for 5 minutes, then transfer to a wire rack with parchment underneath.
  12. Spoon glaze over warm fritters, letting it drip down the sides.
  13. For extra sweetness, apply a second coat of glaze after the first has set (about 5 minutes).
  14. Allow glaze to set completely before serving (about 10-15 minutes).
