- 4 medium sweet potatoes (about 8–10 oz each)
- 1 lb ground turkey (93% lean)
- 1 tablespoon olive oil
- 1 medium onion, finely diced (about 1 cup)
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 2 teaspoons ground cumin
- 1 teaspoon chili powder
- ½ teaspoon paprika
- ½ teaspoon salt (plus more for sweet potatoes)
- ¼ teaspoon black pepper
- 2 ripe avocados, diced
- 2 tablespoons fresh lime juice
- ¼ cup fresh cilantro, chopped
- Optional toppings: Greek yogurt, salsa, or hot sauce
Instructions
- Preheat oven to 425°F. Wash sweet potatoes, prick all over with a fork, rub with olive oil and a pinch of salt, and place on a baking sheet.
- Bake sweet potatoes for 45-55 minutes until fork-tender and slightly crisp on the outside.
- Heat olive oil in a large skillet over medium heat. Add onion and cook for 3-4 minutes until softened.
- Add garlic and cook for 30 seconds until fragrant.
- Add ground turkey, breaking it up with a wooden spoon. Cook for 5-6 minutes until no longer pink.
- Add red bell pepper and cook for another 2-3 minutes until slightly softened.
- Season with cumin, chili powder, paprika, salt, and pepper. Cook for 2 more minutes, then remove from heat.
- In a bowl, combine diced avocado, lime juice, and half the cilantro with a pinch of salt.
- When sweet potatoes are done, cut a slit lengthwise down the center of each one and push ends toward the center to create a pocket.
- Divide turkey mixture among the four sweet potatoes, top with avocado mixture, and sprinkle with remaining cilantro.
- Add optional toppings if desired and serve immediately.
