These Apple Cookies are dangerously addictive – soft centers loaded with cinnamon-spiced apple chunks and crispy edges that’ll have you sneaking seconds from the cookie jar. Trust us, you’ll want to double the batch.

- 2¼ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground cloves (optional)
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- ¾ cup light brown sugar, packed
- 2 large eggs, room temperature
- 1 teaspoon pure vanilla extract
- 2 cups diced apples, peeled (about 2 medium apples)
- 1 cup chopped walnuts or pecans (optional)
- ½ cup white chocolate chips or cinnamon chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper. Peel and dice apples into ¼-inch pieces, then pat dry with paper towels.
- In a medium bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves until combined.
- In a large mixing bowl, beat butter with both sugars until light and fluffy, about 3 minutes. Add eggs one at a time, beating well after each. Mix in vanilla extract.
- Gradually add dry ingredients to wet ingredients, mixing on low until just incorporated. Fold in diced apples and optional nuts or chips by hand.
- Cover dough and refrigerate for 30 minutes to firm up.
- Drop rounded tablespoons of dough about 2 inches apart on prepared baking sheets.
- Bake for 12-14 minutes until edges are golden brown but centers still look slightly soft.
- Cool on baking sheet for 5 minutes before transferring to wire rack to cool completely.
