Apple Cookies Recipe


Description

These Apple Cookies are dangerously addictive – soft centers loaded with cinnamon-spiced apple chunks and crispy edges that’ll have you sneaking seconds from the cookie jar. Trust us, you’ll want to double the batch.


Ingredients

  • 2¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves (optional)
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup light brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 2 cups diced apples, peeled (about 2 medium apples)
  • 1 cup chopped walnuts or pecans (optional)
  • ½ cup white chocolate chips or cinnamon chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper. Peel and dice apples into ¼-inch pieces, then pat dry with paper towels.
  2. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves until combined.
  3. In a large mixing bowl, beat butter with both sugars until light and fluffy, about 3 minutes. Add eggs one at a time, beating well after each. Mix in vanilla extract.
  4. Gradually add dry ingredients to wet ingredients, mixing on low until just incorporated. Fold in diced apples and optional nuts or chips by hand.
  5. Cover dough and refrigerate for 30 minutes to firm up.
  6. Drop rounded tablespoons of dough about 2 inches apart on prepared baking sheets.
  7. Bake for 12-14 minutes until edges are golden brown but centers still look slightly soft.
  8. Cool on baking sheet for 5 minutes before transferring to wire rack to cool completely.
