Apple Cake


Description

This apple cake recipe is what fall dreams are made of – moist, cinnamon-spiced, and packed with fresh fruit that makes your kitchen smell like heaven.

  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 tablespoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ cup (113g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • ½ cup (100g) brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 3 medium apples (about 1 pound/450g), peeled, cored and diced
  • ½ cup (120ml) buttermilk
  • 2 tablespoons granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Add dry ingredients to butter mixture in three parts, alternating with buttermilk, beginning and ending with flour mixture. Mix gently just until combined.
  6. Fold diced apples into the batter until evenly distributed.
  7. Transfer batter to prepared pan, spreading evenly.
  8. Mix cinnamon and sugar for topping and sprinkle evenly over the batter.
  9. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean with just a few moist crumbs.
  10. Cool in pan for 15 minutes before transferring to a wire rack to cool completely.
