- 2 cups (250g) all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 tablespoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ cup (113g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- ½ cup (100g) brown sugar, packed
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 3 medium apples (about 1 pound/450g), peeled, cored and diced
- ½ cup (120ml) buttermilk
- 2 tablespoons granulated sugar (for topping)
- 1 teaspoon ground cinnamon (for topping)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- Add dry ingredients to butter mixture in three parts, alternating with buttermilk, beginning and ending with flour mixture. Mix gently just until combined.
- Fold diced apples into the batter until evenly distributed.
- Transfer batter to prepared pan, spreading evenly.
- Mix cinnamon and sugar for topping and sprinkle evenly over the batter.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean with just a few moist crumbs.
- Cool in pan for 15 minutes before transferring to a wire rack to cool completely.
