- 2 medium zucchini (about 1 pound or 450g)
- 1 tablespoon olive oil or avocado oil
- 1/2 cup (60g) panko breadcrumbs
- 1/4 cup (25g) grated Parmesan cheese, finely grated
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray (optional, for the air fryer basket)
Instructions
- Wash and dry zucchini, then slice into uniform 1/8-inch rounds using a knife or mandoline.
- Lay zucchini slices on paper towels, sprinkle lightly with salt, and let rest for 15-20 minutes to draw out moisture.
- Preheat your air fryer to 375°F (190°C).
- In a shallow bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, paprika, salt, and pepper.
- Pat zucchini slices dry with fresh paper towels, pressing gently to remove as much moisture as possible.
- Place zucchini in a bowl, drizzle with olive oil, and toss to coat evenly.
- Dip each zucchini slice into the breadcrumb mixture, pressing gently to coat both sides.
- Lightly spray the air fryer basket with cooking spray and arrange coated zucchini in a single layer, leaving space between pieces.
- Cook at 375°F for 8-10 minutes, flipping halfway through, until golden brown and crispy.
- Serve immediately for maximum crispiness.
