Description

Crispy, addictive, and guilt-free. These Air Fryer Zucchini Chips will make you forget potato chips ever existed.

Ingredients

Scale
  • 2 medium zucchini (about 1 pound or 450g)
  • 1 tablespoon olive oil or avocado oil
  • 1/2 cup (60g) panko breadcrumbs
  • 1/4 cup (25g) grated Parmesan cheese, finely grated
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray (optional, for the air fryer basket)

Instructions

  1. Wash and dry zucchini, then slice into uniform 1/8-inch rounds using a knife or mandoline.
  2. Lay zucchini slices on paper towels, sprinkle lightly with salt, and let rest for 15-20 minutes to draw out moisture.
  3. Preheat your air fryer to 375°F (190°C).
  4. In a shallow bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, paprika, salt, and pepper.
  5. Pat zucchini slices dry with fresh paper towels, pressing gently to remove as much moisture as possible.
  6. Place zucchini in a bowl, drizzle with olive oil, and toss to coat evenly.
  7. Dip each zucchini slice into the breadcrumb mixture, pressing gently to coat both sides.
  8. Lightly spray the air fryer basket with cooking spray and arrange coated zucchini in a single layer, leaving space between pieces.
  9. Cook at 375°F for 8-10 minutes, flipping halfway through, until golden brown and crispy.
  10. Serve immediately for maximum crispiness.
