- 2 medium yellow summer squash or zucchini (approximately 1 pound)
- 1 tablespoon olive oil
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon dried Italian herbs (optional)
- 2 tablespoons freshly grated Parmesan cheese (optional)
Instructions
- Wash squash and pat completely dry. Trim ends and slice into ½-inch thick rounds or half-moons.
- Place squash in a bowl, drizzle with olive oil, and toss to coat. Add salt, pepper, garlic powder, onion powder, and Italian herbs if using. Toss until evenly seasoned.
- Preheat air fryer to 375°F (190°C) for 2-3 minutes.
- Arrange seasoned squash in a single layer in the air fryer basket, being careful not to overcrowd.
- Cook for 8-10 minutes total, pausing halfway through to shake the basket or flip pieces with tongs.
- Squash is done when edges are golden brown and slightly crispy, with centers tender when pierced.
- If using Parmesan, sprinkle over hot squash immediately after removing from air fryer.
- Transfer to a serving plate and enjoy while hot for best texture and flavor.
