Air Fryer Southwest Egg Rolls

These Air Fryer Southwest Egg Rolls bring restaurant-quality crunch without the deep fryer! Golden, crispy outsides with cheesy, spicy insides – your family will beg for seconds.


Ingredients

  • 12 egg roll wrappers (6×6 inch squares)
  • 1 tablespoon olive oil
  • 1 medium onion, finely diced (about 1 cup)
  • 1 red bell pepper, diced (about 1 cup)
  • 2 cloves garlic, minced
  • 1 cup frozen corn kernels, thawed
  • 1 (15 oz) can black beans, drained and rinsed
  • 2 cups fresh spinach, roughly chopped
  • 2 cups cooked chicken, shredded (optional)
  • 1 cup Mexican blend cheese, shredded
  • 1 tablespoon taco seasoning
  • 1 teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon lime juice
  • Cooking spray

For the Avocado Dipping Sauce:

  • 1 ripe avocado
  • ½ cup sour cream
  • 2 tablespoons lime juice
  • 2 tablespoons cilantro, chopped
  • ¼ teaspoon salt
  • 1 small jalapeño, seeds removed and diced (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onions and bell peppers, sautéing for 3-4 minutes until softened. Add garlic and cook for another 30 seconds until fragrant.
  2. Add corn, black beans, taco seasoning, cumin, salt, and pepper to the skillet. Cook for 2 minutes, then add spinach and cook until wilted, about 1 minute. Remove from heat and stir in chicken (if using), cheese, cilantro, and lime juice. Let cool for 15 minutes.
  3. Place an egg roll wrapper with one corner pointing toward you. Add 3 tablespoons of filling on the lower third. Fold the bottom corner over the filling, fold in both sides, then continue rolling upward. Seal the top corner with water. Repeat with remaining wrappers.
  4. Preheat air fryer to 375°F (190°C). Lightly spray the basket with cooking spray. Place egg rolls in a single layer with space between each. Spray tops lightly with cooking spray.
  5. Cook for 6 minutes, flip egg rolls, spray again lightly, and cook for another 6 minutes until golden and crispy.
  6. While egg rolls cook, blend all dipping sauce ingredients until smooth. Refrigerate until serving.
  7. Let egg rolls cool for 2-3 minutes before serving with the avocado dipping sauce.
