- 1½ pounds (680g) boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 large eggs, beaten
- 1 tablespoon water
- 1 cup (120g) all-purpose flour
- 2 packets (2 oz/56g) ranch seasoning mix, divided
- 1 cup (120g) panko breadcrumbs
- ½ cup (45g) grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon black pepper
- Cooking spray (preferably olive oil)
- Ranch dressing for dipping (optional)
Instructions
- Set up three shallow bowls. In the first, mix flour with 1 packet of ranch seasoning. In the second, whisk eggs and water. In the third, combine panko, Parmesan, remaining ranch seasoning, garlic powder, paprika, and pepper.
- Pat chicken pieces dry with paper towels, then dredge each piece first in flour mixture, then egg mixture, then breadcrumb mixture, pressing to adhere.
- Preheat air fryer to 375°F (190°C) for 3 minutes, then lightly spray the basket with cooking spray.
- Arrange chicken pieces in a single layer in the air fryer basket, making sure they don’t touch. Lightly spray tops with cooking spray.
- Cook for 5 minutes, then flip the chicken bites and continue cooking for another 4-5 minutes until golden brown and internal temperature reaches 165°F (74°C).
- Serve immediately with ranch dressing or your favorite dipping sauce.
