- 2 pounds boneless, skinless chicken breasts (about 4 pieces)
- 1 cup freshly grated Parmesan cheese
- 3/4 cup panko breadcrumbs
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs
- 2 tablespoons Dijon mustard
- 2 tablespoons olive oil
- Cooking spray (preferably olive oil spray)
- Fresh parsley for garnish (optional)
Instructions
- Pat chicken breasts dry and pound to 1/2-inch thickness between plastic wrap using a meat mallet.
- Whisk eggs and Dijon mustard in a shallow bowl until well combined.
- In another bowl, mix Parmesan, panko, Italian seasoning, garlic powder, paprika, salt, and pepper. Drizzle with olive oil and mix with fingers until slightly moistened.
- Dip each chicken breast in egg mixture, then press firmly into Parmesan mixture, coating all sides well.
- Let coated chicken rest 5 minutes to help coating adhere.
- Preheat air fryer to 375°F (190°C) for 3 minutes, then lightly spray the basket.
- Place chicken in air fryer basket in a single layer, leaving space between pieces. Lightly spray tops with cooking spray.
- Cook for 5-6 minutes, flip, spray other side, and cook 5-6 more minutes until golden and internal temperature reaches 165°F (74°C).
- Rest for 3-5 minutes before serving to allow juices to redistribute.
- Garnish with fresh parsley if desired and serve with your favorite sides.
