Ingredients

Scale
  • lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 2 tablespoons vegetable oil (divided)
  • 2 tablespoons soy sauce
  • 1 tablespoon unsalted butter, melted
  • 1 teaspoon sesame oil
  • 2 teaspoons minced garlic
  • 1 teaspoon grated fresh ginger
  • ½ teaspoon black pepper
  • 1 medium zucchini, cut into half-moons
  • 1 medium yellow onion, sliced into wedges
  • 8 oz mushrooms, sliced
  • 1 tablespoon vegetable oil
  • 1 tablespoon soy sauce
  • ½ teaspoon garlic powder
  • ¼ cup soy sauce (for sauce)
  • 2 tablespoons unsalted butter, melted (for sauce)
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon fresh minced garlic
  • ½ teaspoon ground ginger

Instructions

  1. In a bowl, combine 2 tablespoons oil, 2 tablespoons soy sauce, melted butter, sesame oil, minced garlic, grated ginger, and black pepper. Add chicken pieces, toss until coated, and marinate for 15 minutes.
  2. In a separate bowl, toss zucchini, onion, and mushrooms with 1 tablespoon oil, 1 tablespoon soy sauce, and garlic powder.
  3. For the sauce, whisk together ¼ cup soy sauce, 2 tablespoons melted butter, rice vinegar, honey, minced garlic, and ground ginger. Set aside.
  4. Preheat air fryer to 400°F for 3 minutes. Add marinated chicken in a single layer and cook for 10-12 minutes, turning halfway through.
  5. Remove chicken, tent with foil. Add vegetables to air fryer and cook at 380°F for 6-8 minutes, shaking halfway through.
  6. Combine chicken and vegetables in a serving dish. Drizzle with half the hibachi sauce, toss to coat, and serve with remaining sauce on the side.
