  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 cup freshly grated Parmesan cheese
  • 1/2 cup plain breadcrumbs
  • 2 tablespoons garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten
  • 2 tablespoons olive oil or avocado oil spray
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions

  1. Pat chicken dry with paper towels. If using breasts, pound to even 1/2-inch thickness between plastic wrap. Season lightly with salt and pepper.
  2. In a shallow dish, combine Parmesan, breadcrumbs, garlic powder, Italian seasoning, paprika, salt, and pepper. Beat eggs in a separate bowl.
  3. Dip each chicken piece in beaten egg, then press firmly into the Parmesan mixture, coating all sides. Let coated pieces rest for 5 minutes.
  4. Preheat air fryer to 380°F (190°C) for 3-5 minutes. Spray the basket lightly with oil.
  5. Place chicken in a single layer in the air fryer basket (cook in batches if needed). Spray tops lightly with oil.
  6. Cook chicken breasts for 10-12 minutes or thighs for 8-10 minutes, flipping halfway through, until internal temperature reaches 165°F and coating is golden.
  7. Let chicken rest for 3-5 minutes before serving. Sprinkle with fresh parsley if desired.
