1 pound (454g) pre-cooked chicken sausage, sliced into ½-inch rounds
1 medium zucchini (about 8oz/225g), cut into ½-inch half-moons
1 medium yellow squash (about 8oz/225g), cut into ½-inch half-moons
1 large red bell pepper (about 6oz/170g), chopped into 1-inch pieces
1 medium red onion (about 6oz/170g), cut into 1-inch chunks
2 tablespoons olive oil
2 teaspoons Italian seasoning
1 teaspoon garlic powder
½ teaspoon paprika
½ teaspoon salt
¼ teaspoon black pepper
Optional: 2 tablespoons grated Parmesan cheese for serving
Instructions
- Slice chicken sausage into ½-inch rounds and chop all vegetables into 1-inch pieces.
- In a large bowl, toss sausage and vegetables with olive oil, Italian seasoning, garlic powder, paprika, salt, and pepper until evenly coated.
- Preheat air fryer to 390°F (200°C) for 3 minutes.
- Transfer about half of the sausage and vegetable mixture to the air fryer basket, arranging in a relatively even layer.
- Cook for 10-12 minutes, shaking the basket halfway through cooking, until vegetables have golden edges and sausage is slightly crisp.
- Transfer the first batch to a serving plate and repeat with remaining mixture.
- Combine all cooked ingredients, sprinkle with optional Parmesan cheese, and serve immediately.
