For the Chicken:
- 4 boneless, skinless chicken breasts (about 1.5 pounds or 680g)
- 1 tablespoon olive oil (15ml)
- 1 teaspoon garlic powder (2g)
- 1 teaspoon onion powder (2g)
- 1/2 teaspoon smoked paprika (1g)
- Salt and pepper, to taste

For the Vegetables:
- 2 medium zucchinis, sliced (about 300g)
- 1 bell pepper, sliced (150g)
- 1 cup Brussels sprouts, halved (150g)
- 1 carrot, sliced (100g)
- 2 tablespoons olive oil (30ml)
- 1 teaspoon dried oregano (1g)
- 1/2 teaspoon garlic powder (1g)
- Salt and pepper, to taste
Instructions
- Prep the Chicken: Season the chicken breasts with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Let them sit for a few minutes to marinate.
- Prepare the Vegetables: In a large mixing bowl, toss the zucchini, bell pepper, Brussels sprouts, and carrot with olive oil, garlic powder, oregano, salt, and pepper.
- Cook the Chicken: Preheat the air fryer to 375°F (190°C). Place the chicken breasts in the air fryer basket and cook for 15-18 minutes, flipping halfway through. The chicken should reach an internal temperature of 165°F (75°C).
- Cook the Vegetables: After removing the chicken, add the vegetables to the air fryer basket. Cook at 375°F (190°C) for 10-12 minutes, shaking the basket halfway through to ensure even cooking.
- Serve: Slice the chicken and serve it alongside the roasted vegetables. Enjoy!
