Crispy buffalo cauliflower bites with all the flavor and none of the guilt? This air fryer version will have you forgetting chicken wings ever existed.

- 1 large head cauliflower (about 2 pounds), cut into 1½-inch florets
- 2 tablespoons olive oil
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon black pepper
- ½ teaspoon salt
- ¾ cup buffalo sauce (like Frank’s RedHot)
- 2 tablespoons unsalted butter, melted
- 1 tablespoon honey (optional)
- ¾ cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs (optional)
Instructions
- Cut cauliflower into evenly-sized florets (about 1½ inches), pat dry thoroughly, and place in a large bowl. Drizzle with olive oil and toss until lightly coated.
- In a medium bowl, whisk together flour, garlic powder, onion powder, salt, and pepper. In a separate bowl, beat the eggs. If using panko, place in a third bowl.
- Coat cauliflower pieces in the flour mixture. For extra crispiness, dip floured cauliflower in egg wash, then roll in panko breadcrumbs.
- Preheat air fryer to 375°F (190°C) for 3 minutes. Arrange coated cauliflower in a single layer in the basket, working in batches.
- Cook for 12-15 minutes, shaking the basket halfway through. While cooking, whisk together buffalo sauce, melted butter, and honey (if using) in a small bowl.
- When cauliflower is golden and crispy, transfer to a large bowl and toss with half the buffalo sauce. Return to air fryer for 2-3 more minutes.
- After final cooking, toss with remaining sauce and serve immediately with your favorite dipping sauce.
