Chicken and Pasta
- 1.5 lbs (680g) boneless, skinless chicken breasts, cut into 1-inch cubes
- 16 oz (450g) pasta (penne, fusilli, or your preferred shape)
- 4 cups (120g) fresh spinach leaves
- 1 can (14.5 oz/400g) diced tomatoes
- 3 tbsp (45ml) olive oil

Sauce Ingredients
- 4 cloves garlic, minced
- 1 medium onion, finely chopped
- 1 cup (240ml) chicken broth
- 1/2 cup (120ml) heavy cream (optional)
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
Instructions
- Preparation (10 minutes):
- Cut chicken into 1-inch cubes
- Mince garlic
- Chop onion
- Measure out all ingredients
- Chicken Searing (5-7 minutes):
- Heat olive oil in a large skillet over medium-high heat
- Season chicken with salt and pepper
- Add chicken in a single layer
- Cook 3-4 minutes per side until golden brown
- Remove chicken and set aside
- Flavor Base (5 minutes):
- Reduce heat to medium
- Add chopped onions, sauté until translucent
- Add minced garlic, cook 30 seconds
- Deglaze pan with chicken broth
- Sauce Creation (10 minutes):
- Add diced tomatoes and juice
- Stir in oregano and basil
- Simmer and slightly reduce sauce
- Optional: Add heavy cream
- Return chicken to pan
- Pasta Cooking (12-15 minutes):
- Add pasta directly to sauce
