    • 4 cups (120g) fresh spinach leaves
    • 1 can (14.5 oz/400g) diced tomatoes
    • 3 tbsp (45ml) olive oil
  2. Sauce Ingredients

    • 4 cloves garlic, minced
    • 1 medium onion, finely chopped
    • 1 cup (240ml) chicken broth
    • 1/2 cup (120ml) heavy cream (optional)
    • 1 tsp dried oregano
    • 1 tsp dried basil
    • Salt and pepper to taste

Instructions

  1. Preparation (10 minutes):
    • Cut chicken into 1-inch cubes
    • Mince garlic
    • Chop onion
    • Measure out all ingredients
  2. Chicken Searing (5-7 minutes):
    • Heat olive oil in a large skillet over medium-high heat
    • Season chicken with salt and pepper
    • Add chicken in a single layer
    • Cook 3-4 minutes per side until golden brown
    • Remove chicken and set aside
  3. Flavor Base (5 minutes):
    • Reduce heat to medium
    • Add chopped onions, sauté until translucent
    • Add minced garlic, cook 30 seconds
    • Deglaze pan with chicken broth
  4. Sauce Creation (10 minutes):
    • Add diced tomatoes and juice
    • Stir in oregano and basil
    • Simmer and slightly reduce sauce
    • Optional: Add heavy cream
    • Return chicken to pan
  5. Pasta Cooking (12-15 minutes):
    • Add pasta directly to sauce
    • Pour in additional broth if needed
    • Stir occasionally
    • Cook until pasta is al dente
    • Add pasta water if sauce thickens too much

 

  • Final Touch (3 minutes):
