Thai Style Sweet Chili Ribs

Thai Style Sweet Chili Ribs Recipe

Description

Make Thai Style Sweet Chili Ribs with tender meat and a savory, sticky glaze. A perfect dish for any occasion, made in your slow cooker!

Ingredients

Scale
  • For the Ribs:
    • 2 pounds of pork ribs (baby back or spare ribs)
    • 1 tablespoon olive oil
    • 1 teaspoon salt
    • ½ teaspoon black pepper
  • For the Thai Sweet Chili Sauce:
    • ½ cup sweet chili sauce
    • 2 tablespoons fish sauce
    • 1 tablespoon soy sauce
    • 1 tablespoon honey or brown sugar
    • 2 tablespoons lime juice
    • 2 cloves garlic, minced
    • 1 tablespoon ginger, minced
    • ½ teaspoon red pepper flakes (adjust to taste)
    • 1 tablespoon cornstarch (optional, for thickening the sauce)

Instructions

  1. Sear the Ribs: Heat the olive oil in a large skillet over medium-high heat. Season the ribs with salt and pepper, then sear them in the hot pan for about 2-3 minutes per side until golden brown.
  2. Prepare the Sauce: In a bowl, combine the sweet chili sauce, fish sauce, soy sauce, honey, lime juice, garlic, ginger, and red pepper flakes. Stir until well combined.
  3. Slow Cook the Ribs: Transfer the seared ribs to the slow cooker. Pour the sauce over the ribs, ensuring they are well-coated. Cover the slow cooker and cook on low for 6-7 hours or high for 3-4 hours until the ribs are tender and the meat pulls away from the bone.
  4. Thicken the Sauce: If you prefer a thicker sauce, mix the cornstarch with a bit of water to create a slurry and stir it into the slow cooker. Cook for an additional 30 minutes until the sauce thickens.
  5. Serve: Remove the ribs from the slow cooker and serve with a drizzle of the sauce over the top. Enjoy your flavorful, tender Thai-style ribs!
