- ½ teaspoon red pepper flakes (adjust to taste)
- 1 tablespoon cornstarch (optional, for thickening the sauce)

- Sear the Ribs: Heat the olive oil in a large skillet over medium-high heat. Season the ribs with salt and pepper, then sear them in the hot pan for about 2-3 minutes per side until golden brown.
- Prepare the Sauce: In a bowl, combine the sweet chili sauce, fish sauce, soy sauce, honey, lime juice, garlic, ginger, and red pepper flakes. Stir until well combined.
- Slow Cook the Ribs: Transfer the seared ribs to the slow cooker. Pour the sauce over the ribs, ensuring they are well-coated. Cover the slow cooker and cook on low for 6-7 hours or high for 3-4 hours until the ribs are tender and the meat pulls away from the bone.
- Thicken the Sauce: If you prefer a thicker sauce, mix the cornstarch with a bit of water to create a slurry and stir it into the slow cooker. Cook for an additional 30 minutes until the sauce thickens.
