    • ½ cup brown sugar, packed
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1 teaspoon ground cinnamon
    • ¼ teaspoon ground nutmeg
    • ¼ teaspoon ground ginger
    • ¼ teaspoon salt
    • ½ cup heavy cream or evaporated milk
    • 2 tablespoons unsalted butter, melted
  • For the crust:
    • 1 pre-made pie crust (or homemade if preferred)

Instructions

  1. Prepare the Sweet Potatoes: Begin by washing and peeling the sweet potatoes. You can either bake them at 400°F (200°C) for about 45 minutes or boil them until tender (about 20-25 minutes). Once cooked, mash the sweet potatoes until smooth. Set them aside to cool slightly.
  2. Make the Filling: In a mixing bowl, combine the mashed sweet potatoes with the granulated sugar, brown sugar, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix until smooth and fully combined. Gradually add the heavy cream (or evaporated milk) and melted butter, continuing to mix until the filling is completely smooth and creamy.
  3. Prepare the Pie Crust: If using a store-bought pie crust, pre-bake it according to the package instructions for about 5-7 minutes. If making a homemade crust, roll it out and place it in a pie dish, then proceed with pre-baking.
  4. Assemble the Pie: Pour the sweet potato filling into the pre-baked pie crust, spreading it evenly with a spatula. Smooth the top for a polished finish.
  5. Bake the Pie: Bake the pie in a preheated 350°F (175°C) oven for 50-60 minutes, or until the filling is set and a toothpick inserted in the center comes out clean. If the crust is browning too quickly, cover the edges with foil to prevent burning.
  6. Cool and Serve: Let the pie cool completely on a wire rack. Once cool, refrigerate the pie for at least 2 hours before serving. This helps the flavors set and makes slicing easier.
