Salmon with Garlic Lemon Butter Sauce Recipe

  • 4 salmon fillets (6 oz/170g each), skin-on
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper
  • 4 tablespoons (2 oz/56g) unsalted butter
  • 4 cloves garlic, finely minced (about 1½ tablespoons)
  • ¼ cup (60ml) fresh lemon juice (approximately 12 lemons)
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon lemon zest
  • Lemon slices for garnish

Instructions

  1. Remove salmon from refrigerator 15-20 minutes before cooking. Pat dry with paper towels and season with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Place salmon fillets skin-side down and cook for 4-5 minutes until skin is crispy.
  3. Flip salmon and cook for another 2-3 minutes until it reaches 125°F (52°C) at the thickest part. Transfer to a plate and tent with foil.
  4. Reduce heat to medium-low and add butter to the same pan. Once melted, add garlic and sauté for 30-45 seconds until fragrant.
  5. Add lemon juice and scrape up any brown bits from the pan. Let simmer for 1-2 minutes until slightly reduced.
  6. Stir in lemon zest and parsley. Taste and adjust seasoning if needed.
  7. Return salmon to the pan, spoon sauce over fillets, or plate salmon and drizzle with sauce.
  8. Garnish with lemon slices and additional parsley if desired. Serve immediately.
