Ingredients

  • Thinly sliced beef: 1 pound (rib-eye or flank steak works best)
  • Pasta: 8 ounces (penne, rotini, or another medium pasta)
  • Onions: 1 large, thinly sliced (for caramelization)
  • Bell peppers: 2 (1 red, 1 green, thinly sliced)
  • Provolone cheese: 1 ½ cups, shredded (for the creamy sauce)
  • American cheese: 1 cup, shredded (adds creaminess and flavor)
  • Heavy cream: 1 cup (for the sauce)
  • Garlic: 3 cloves, minced (adds depth of flavor)
  • Olive oil: 2 tablespoons (for sautéing)
  • Salt and pepper: To taste (for seasoning)
  • Butter: 2 tablespoons (for flavor and richness)

Instructions

  1. Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water for the sauce.
  2. Sauté the Beef: While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the thinly sliced beef and cook until browned, about 3-4 minutes. Season with salt and pepper. Once cooked, remove the beef from the skillet and set aside.
  3. Caramelize the Onions and Peppers: In the same skillet, add another tablespoon of olive oil. Add the sliced onions and bell peppers. Cook over medium heat, stirring occasionally, for about 10-15 minutes, until the vegetables are soft and caramelized. Remove from the skillet and set aside.
  4. Prepare the Cheese Sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant. Pour in the heavy cream and bring to a simmer. Stir in the provolone and American cheese, and cook until the cheese has melted and the sauce is smooth and creamy. Add salt and pepper to taste.
  5. Combine the Pasta and Beef: Add the cooked pasta and beef to the skillet with the cheese sauce. Stir well to combine, ensuring the pasta is well-coated with the sauce. If the sauce is too thick, add some reserved pasta water to reach your desired consistency.
  6. Serve: Add the caramelized onions and peppers back to the skillet and stir to combine. Serve the Philly Cheesesteak Pasta immediately, garnished with extra cheese or fresh parsley, if desired.
