- 8 cups fresh peaches (about 3½ pounds or 8–10 medium peaches), peeled and sliced into ½-inch wedges
- ¾ cup granulated sugar
- ¼ cup light brown sugar, packed
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice (fresh is best)
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ⅛ teaspoon salt
- 2 cups all-purpose flour
- ½ cup granulated sugar
- ½ cup light brown sugar, packed
- 2 teaspoons baking powder
- 1 teaspoon salt
- 12 tablespoons (1½ sticks) cold unsalted butter, cubed
- ½ cup boiling water
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with butter.
- Peel and slice peaches into ½-inch wedges.
- In a large bowl, combine sliced peaches, ¾ cup granulated sugar, ¼ cup brown sugar, cornstarch, lemon juice, cinnamon, nutmeg, and salt. Toss until evenly coated.
- Transfer peach mixture to prepared baking dish and spread evenly. Let sit for 5 minutes.
- In a medium bowl, whisk together flour, ½ cup granulated sugar, ½ cup brown sugar, baking powder, and salt.
- Add cold cubed butter to flour mixture. Work butter into dry ingredients until mixture resembles coarse crumbs.
- Pour boiling water over flour-butter mixture and stir just until combined.
- Drop portions of dough over peach filling, covering most of the surface but leaving some gaps.
- Optional: Sprinkle an additional tablespoon of sugar over the topping.
- Place on a rimmed baking sheet and bake for 40-45 minutes until topping is golden brown and filling is bubbling.
- Allow to cool for at least 30 minutes before serving.
