- 1 ½ cups pecan halves (or chopped, if preferred)
- 1 pre-made pie crust (or homemade if you prefer)
- 1 cup light corn syrup
- ¾ cup granulated sugar
- 3 large eggs
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
- Optional: 2 tablespoons bourbon or dark rum for added flavor
- Optional: ¼ cup mini chocolate chips for a chocolate twist
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Place a pie crust in a 9-inch pie dish, pressing it into the bottom and sides. If using a homemade crust, roll it out and place it in the dish.
- Prepare the Filling: In a medium mixing bowl, whisk together the corn syrup, granulated sugar, eggs, melted butter, vanilla extract, and salt. If using bourbon or rum, add it to the mixture at this stage. Mix until smooth and well combined.
- Add the Pecans: Stir the toasted pecans into the filling mixture. Ensure that the pecans are evenly distributed throughout the filling.
- Assemble the Pie: Pour the pecan mixture into the prepared pie crust, spreading the pecans evenly over the surface. If desired, sprinkle mini chocolate chips on top for a chocolatey twist.
- Bake the Pie: Place the pie in the preheated oven and bake for 50-60 minutes, or until the filling is set and the crust is golden brown. You may need to cover the edges of the crust with foil during the last 15 minutes to prevent it from burning.
- Cool and Serve: Let the pie cool completely on a wire rack before slicing. This allows the filling to set and makes it easier to cut neat slices.
