For the Chicken:

For the Mushroom Sauce:
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 8 oz mushrooms (button or cremini), sliced
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1 teaspoon Dijon mustard (optional for added tang)
- 1/2 teaspoon dried rosemary
- Fresh parsley for garnish

- Prepare the Chicken: Season both sides of the chicken breasts with salt, pepper, and dried thyme. If you’re using chicken thighs, you can leave them whole, but if using chicken breasts, pound them to an even thickness for even cooking.
- Cook the Chicken: Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts (or thighs) and cook for 6-7 minutes per side until golden brown and cooked through. If you have a meat thermometer, check that the internal temperature has reached 165°F (75°C). Remove the chicken from the pan and set it aside.
- Sauté the Vegetables: In the same skillet, add butter and olive oil. Add the chopped onion and sauté for 3-4 minutes until softened. Add the minced garlic and sliced mushrooms, cooking for another 5-7 minutes until the mushrooms release their moisture and become golden brown.
- Make the Sauce: Pour in the chicken broth and bring to a simmer. Cook for 3-4 minutes, allowing the broth to reduce slightly. Stir in the heavy cream, Dijon mustard, rosemary, and any leftover thyme. Let the sauce simmer for an additional 5-7 minutes, allowing it to thicken and become creamy.
- Finish the Dish: Return the cooked chicken to the skillet, nestling it into the sauce. Let it simmer in the sauce for 5-7 minutes, allowing the chicken to absorb the flavors. Taste the sauce and adjust the seasoning with salt and pepper as needed.
