  • 1 package of pie dough (or homemade dough)
  • 6 large eggs
  • 1 cup heavy cream (or milk for a lighter version)
  • 1 cup shredded cheese (cheddar, Swiss, or your choice)
  • 1/2 cup cooked ham, crumbled bacon, or sausage (optional)
  • 1/4 cup sautéed spinach or other vegetables (optional)
  • Salt and pepper to taste
  • 1/4 teaspoon dried herbs (optional)

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) and grease your mini muffin tin or tart pans with cooking spray or butter.
  2. Prepare the dough: Roll out the pie dough on a lightly floured surface. Use a round cutter or a glass to cut out circles large enough to fit into the muffin tin. Press each dough circle gently into the cups, making sure the edges are neatly pressed down.
  3. Blind bake the crust: Place the dough-lined muffin tin in the oven for 8-10 minutes or until the edges of the crust begin to brown slightly. Remove from the oven and set aside.
  4. Make the filling: In a mixing bowl, whisk together the eggs, cream, cheese, and seasonings. If you’re adding cooked meat or vegetables, combine them with the egg mixture.
  5. Fill the crusts: Spoon the egg mixture into the partially baked crusts, filling each one about 3/4 of the way full.
  6. Bake the quiches: Return the tin to the oven and bake for 15-20 minutes, or until the quiches are set and golden brown on top. You can test them by inserting a toothpick; it should come out clean.
  7. Cool and serve: Let the quiches cool slightly before serving. They can be enjoyed warm or at room temperature.
