  • For the Chicken:

    • 4 boneless, skinless chicken breasts (about 1.5 pounds or 680g)
    • Salt and pepper, to taste
    • 1 tablespoon olive oil (15ml)
    • 1 tablespoon unsalted butter (15g)
  • For the Sauce:

    • 1/2 cup sun-dried tomatoes (120g), drained and chopped
    • 4 cloves garlic, minced
    • 1 cup heavy cream (240ml)
    • 1/2 cup grated Parmesan cheese (50g)
    • 1/4 cup chicken broth (60ml)
    • 1/2 teaspoon dried oregano (1g)
    • 1/2 teaspoon dried basil (1g)
    • 1/4 teaspoon crushed red pepper flakes (optional, for heat)
    • Salt and pepper, to taste
  • For the Pasta:

    • 8 ounces (225g) fettuccine or your choice of pasta (uncooked)

Instructions

  1. Cook the Chicken: Heat the olive oil and butter in a large skillet over medium heat. Season the chicken breasts with salt and pepper. Add the chicken to the skillet and cook for 5-6 minutes per side, until golden brown and fully cooked. Remove the chicken from the skillet and set it aside to rest.
  2. Make the Sauce: In the same skillet, add the minced garlic and chopped sun-dried tomatoes. Sauté for 1-2 minutes until fragrant. Pour in the heavy cream, chicken broth, oregano, basil, and red pepper flakes (if using). Stir to combine and bring to a simmer. Let the sauce cook for 5-7 minutes, allowing it to thicken slightly.
  3. Cook the Pasta: While the sauce is simmering, cook the pasta in a large pot of salted water according to the package instructions. Drain the pasta and set it aside.
  4. Combine: Add the grated Parmesan cheese to the sauce and stir until it melts into a creamy consistency. Add the cooked pasta to the skillet and toss to coat the pasta in the sauce. Slice the chicken into strips and place it on top of the pasta.
  5. Serve: Garnish with extra Parmesan cheese and fresh herbs. Serve immediately and enjoy!
