- 1 pound (450g) maple-flavored pork sausage, casings removed
- 2 medium sweet potatoes (about 1.5 pounds/680g), peeled and diced into ½-inch cubes
- 1 large yellow onion (about 8 ounces/225g), diced
- 1 red bell pepper (about 6 ounces/170g), diced
- 2 cloves garlic, minced (about 2 teaspoons)
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
- ½ teaspoon smoked paprika
- ¼ teaspoon cayenne pepper (optional, for heat)
- Salt and freshly ground black pepper, to taste
- 2 green onions, thinly sliced for garnish
Instructions
- Place diced sweet potatoes in a microwave-safe bowl with 1 tablespoon water. Cover with damp paper towel and microwave for 3-4 minutes until slightly softened. Drain and set aside.
- Heat a large cast-iron skillet over medium-high heat. Add maple sausage, breaking into crumbles. Cook 5-6 minutes until browned. Leave 1 tablespoon fat in pan and transfer sausage to a paper towel-lined plate.
- Add 1 tablespoon olive oil to the skillet with sausage fat. Add diced onion and cook 2-3 minutes until softening. Add red bell pepper and cook 2 more minutes. Add garlic and cook 30 seconds until fragrant.
- Add the partially cooked sweet potatoes and remaining tablespoon of olive oil. Add rosemary, thyme, smoked paprika, cayenne (if using), salt, and pepper. Stir to combine and spread in an even layer.
- Let hash cook undisturbed for 3-4 minutes to develop a crust. Flip sections and let cook another 3-4 minutes. Continue until sweet potatoes are tender inside and crispy outside, about 10-12 minutes total.
- Return cooked sausage to the skillet, gently fold into the mixture. Cook 2 more minutes. Taste and adjust seasonings. Remove from heat, sprinkle with green onions, and serve immediately.
