Ingredients
Scale
- 4 boneless, skinless chicken breasts or thighs
- 3 tablespoons soy sauce (low-sodium, if preferred)
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- 1 tablespoon honey or maple syrup (for a touch of sweetness)
- 2 teaspoons grated fresh ginger
- 2 cloves garlic, minced
- 1 teaspoon sesame oil
- 1 teaspoon rice vinegar (optional, for added tang)
- Salt and pepper to taste
- 2 tablespoons chopped fresh cilantro (for garnish)
Instructions
- Prepare the Marinade: In a large bowl, whisk together the soy sauce, olive oil, lemon juice, honey, grated ginger, minced garlic, sesame oil, and rice vinegar. Season with salt and pepper to taste.
- Marinate the Chicken: Place the chicken breasts or thighs in the marinade and toss to coat. Cover the bowl or seal the bag and refrigerate for at least 30 minutes, or up to 4 hours for more intense flavor.
- Preheat the Grill: Preheat your grill to medium-high heat. Make sure the grates are clean and well-oiled to prevent sticking.
- Grill the Chicken: Remove the chicken from the marinade and place it on the grill. Cook for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C). Flip the chicken only once to achieve a nice sear.
- Serve: Remove the chicken from the grill and let it rest for a few minutes before slicing. Garnish with fresh cilantro and serve with your favorite side dishes, such as rice, quinoa, or grilled vegetables.
