- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cans (15 oz each) baked beans
- 1/4 cup barbecue sauce
- 2 tablespoons brown sugar
- 1 tablespoon yellow mustard
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon red pepper flakes (optional for heat)
- 1 tablespoon apple cider vinegar
- Fresh parsley for garnish (optional)
Instructions
- Sauté the Kielbasa: In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the sliced kielbasa and cook for 5-7 minutes, stirring occasionally, until the sausage is browned and slightly crispy.
- Cook the Onion and Garlic: Add the chopped onion and minced garlic to the skillet with the kielbasa. Cook for 3-4 minutes, until the onion becomes translucent and fragrant.
- Add the Beans and Seasonings: Stir in the baked beans, barbecue sauce, brown sugar, mustard, smoked paprika, black pepper, and red pepper flakes (if using). Mix well to combine all the ingredients.
- Simmer the Beans: Reduce the heat to low and let the mixture simmer for 20-25 minutes, stirring occasionally. The sauce will thicken as it simmers and the flavors will develop.
- Finish with Apple Cider Vinegar: Add the apple cider vinegar to the skillet, stirring to combine. Let the beans simmer for an additional 5 minutes to incorporate the vinegar and balance the flavors.
- Serve: Garnish the kielbasa cowboy beans with freshly chopped parsley for a pop of color. Serve hot, either on its own or with your favorite sides.
