  • 2 tablespoons olive oil
  • 1 medium onion, chopped

  • 2 cans (15 oz each) baked beans
  • 1/4 cup barbecue sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon yellow mustard
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon red pepper flakes (optional for heat)
  • 1 tablespoon apple cider vinegar
  • Fresh parsley for garnish (optional)

Instructions

  1. Sauté the Kielbasa: In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the sliced kielbasa and cook for 5-7 minutes, stirring occasionally, until the sausage is browned and slightly crispy.
  2. Cook the Onion and Garlic: Add the chopped onion and minced garlic to the skillet with the kielbasa. Cook for 3-4 minutes, until the onion becomes translucent and fragrant.
  3. Add the Beans and Seasonings: Stir in the baked beans, barbecue sauce, brown sugar, mustard, smoked paprika, black pepper, and red pepper flakes (if using). Mix well to combine all the ingredients.
  4. Simmer the Beans: Reduce the heat to low and let the mixture simmer for 20-25 minutes, stirring occasionally. The sauce will thicken as it simmers and the flavors will develop.
  5. Finish with Apple Cider Vinegar: Add the apple cider vinegar to the skillet, stirring to combine. Let the beans simmer for an additional 5 minutes to incorporate the vinegar and balance the flavors.
  6. Serve: Garnish the kielbasa cowboy beans with freshly chopped parsley for a pop of color. Serve hot, either on its own or with your favorite sides.
