Ingredients

  • 1 lb (450g) large shrimp, peeled and deveined
  • 2 tablespoons vegetable oil, divided
  • 1 red bell pepper, sliced into thin strips
  • 1 yellow bell pepper, sliced into thin strips
  • 1 cup snow peas, ends trimmed
  • 3 green onions, cut into 1-inch pieces
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/3 cup (80ml) low-sodium soy sauce
  • 3 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 teaspoons cornstarch
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 cups cooked rice or noodles for serving
  • 1 tablespoon sesame seeds
  • Extra green onions for garnish

Instructions

  1. Whisk together soy sauce, honey, rice vinegar, sesame oil, cornstarch, and red pepper flakes in a small bowl until smooth. Set aside.
  2. Pat shrimp dry with paper towels and season lightly with salt and pepper. Heat 1 tablespoon oil in a large wok over medium-high heat.
  3. Add shrimp in a single layer and cook for 1-2 minutes per side until pink and opaque. Transfer to a plate.
  4. Add remaining oil to the pan. Add garlic and ginger, stirring for 30 seconds until fragrant.
  5. Add bell peppers and stir-fry for 2 minutes, then add snow peas for another minute. Add green onions and toss for 30 seconds.
  6. Give the sauce a quick stir and pour into the pan. Bring to a simmer and cook for 30-60 seconds until thickened.
  7. Return shrimp to the pan and toss until evenly coated and heated through, about 1 minute.
  8. Serve immediately over rice or noodles, garnished with sesame seeds and extra green onions.
