Honey Garlic Salmon Bites

  • pounds (680g) fresh salmon fillet, skin removed and cut into 1-inch cubes
  • 2 tablespoons (30ml) olive oil
  • Salt and pepper to taste
  • ¼ cup (60ml) soy sauce (low-sodium preferred)
  • ¼ cup (85g) honey
  • 4 cloves garlic, minced (about 2 tablespoons)
  • 1 tablespoon (15ml) rice vinegar
  • 1 tablespoon (15g) butter
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (slurry)
  • 2 green onions, thinly sliced for garnish
  • 1 teaspoon sesame seeds for garnish
  • Red pepper flakes (optional, for heat)

Instructions

  1. Pat salmon dry with paper towels. Cut into 1-inch cubes and season with salt and pepper.
  2. Heat olive oil in a large non-stick skillet over medium-high heat. Add salmon cubes in a single layer, working in batches if necessary. Sear for 2 minutes on one side, then flip and cook for 1-2 minutes more. Transfer to a plate.
  3. Reduce heat to medium and add butter to the same pan. Once melted, add minced garlic and sauté for 30 seconds until fragrant.
  4. Add soy sauce and rice vinegar, scraping up any browned bits from the pan. Stir in honey and bring to a simmer.
  5. Pour in the cornstarch slurry while stirring constantly. Simmer for 1-2 minutes until sauce thickens and becomes glossy.
  6. Return salmon to the pan and gently toss to coat with the sauce. Cook for 1-2 minutes more until salmon is cooked through but still tender.
  7. Remove from heat and garnish with sliced green onions, sesame seeds, and red pepper flakes if desired. Serve immediately.
