- 1½ pounds (680g) fresh salmon fillet, skin removed and cut into 1-inch cubes
- 2 tablespoons (30ml) olive oil
- Salt and pepper to taste
- ¼ cup (60ml) soy sauce (low-sodium preferred)
- ¼ cup (85g) honey
- 4 cloves garlic, minced (about 2 tablespoons)
- 1 tablespoon (15ml) rice vinegar
- 1 tablespoon (15g) butter
- 1 teaspoon cornstarch mixed with 1 tablespoon water (slurry)
- 2 green onions, thinly sliced for garnish
- 1 teaspoon sesame seeds for garnish
- Red pepper flakes (optional, for heat)
Instructions
- Pat salmon dry with paper towels. Cut into 1-inch cubes and season with salt and pepper.
- Heat olive oil in a large non-stick skillet over medium-high heat. Add salmon cubes in a single layer, working in batches if necessary. Sear for 2 minutes on one side, then flip and cook for 1-2 minutes more. Transfer to a plate.
- Reduce heat to medium and add butter to the same pan. Once melted, add minced garlic and sauté for 30 seconds until fragrant.
- Add soy sauce and rice vinegar, scraping up any browned bits from the pan. Stir in honey and bring to a simmer.
- Pour in the cornstarch slurry while stirring constantly. Simmer for 1-2 minutes until sauce thickens and becomes glossy.
- Return salmon to the pan and gently toss to coat with the sauce. Cook for 1-2 minutes more until salmon is cooked through but still tender.
- Remove from heat and garnish with sliced green onions, sesame seeds, and red pepper flakes if desired. Serve immediately.
