For the Crispy Parmesan Chicken:
- 4 boneless, skinless chicken breasts (about 1.5 lbs / 680g)
- 1 cup (100g) freshly grated parmesan cheese
- 1 cup (120g) breadcrumbs
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 large eggs
- ¼ cup (60ml) olive oil for cooking

For the Dreamy Garlic Cream Sauce:
- 2 tablespoons butter
- 4 garlic cloves, minced
- 1 cup (240ml) heavy cream
- ½ cup (120ml) chicken broth
- ½ cup (50g) freshly grated parmesan cheese
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Prepare the chicken by placing breasts between plastic wrap. Gently pound to ½-inch thickness using a meat mallet.
- Create the breading station:
- Dish 1: Mix breadcrumbs, parmesan, oregano, garlic powder, salt, and pepper
- Dish 2: Whisk eggs
- Dish 3: Optional light coating of flour
- Dredge each chicken breast:
- Lightly coat in flour (if using)
- Dip in beaten eggs
- Cover completely in parmesan-breadcrumb mixture
- Heat olive oil in a large skillet over medium-high heat.
- Cook chicken for 4-5 minutes per side until golden brown and internal temperature reaches 165°F (74°C).
- For the garlic cream sauce:
- Melt butter in a separate pan
- Add minced garlic, sauté until fragrant (1-2 minutes)
- Pour in heavy cream and chicken broth
- Simmer for 3-4 minutes
- Stir in parmesan cheese
- Season with salt and pepper
- Add chopped parsley
- Plate chicken and pour sauce over the top.
- Garnish with additional parsley and parmesan if desired.
