- 1½ lbs (680g) boneless, skinless chicken breasts or thighs
- 1 cup (120g) all-purpose flour
- 2 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp cayenne pepper (adjust to taste)
- 1 tsp salt
- ½ tsp black pepper
- 2 large eggs, beaten
- 1½ cups (150g) panko breadcrumbs
- ⅓ cup (80ml) vegetable oil for frying
- ½ cup (120ml) honey
- 2 tbsp hot sauce (like Sriracha or Frank’s)
- 6 oz (170g) feta cheese, crumbled
- 2 tbsp fresh chives or green onions, chopped
Instructions
- Slice chicken breasts horizontally to create thinner cutlets or ensure thighs are even thickness. Pat completely dry with paper towels and season lightly with salt and pepper.
- Set up three shallow dishes: combine flour with all seasonings in the first, beat eggs in the second, and place panko breadcrumbs in the third.
- Dredge each piece of chicken in the seasoned flour, dip in beaten eggs, then press firmly into panko breadcrumbs. Let coated chicken rest for 5 minutes.
- Heat oil in a large skillet over medium-high heat. Fry chicken for 4-5 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Transfer to a wire rack.
- Combine honey and hot sauce in a small saucepan over low heat, stirring until well blended and warmed through.
- Place crispy chicken on serving plates, drizzle generously with hot honey, and sprinkle with crumbled feta cheese and fresh chives. Serve immediately.
