Creamy Maple Chicken

  • pounds (680g) boneless, skinless chicken breasts or thighs
  • 2 tablespoons (30ml) olive oil
  • 2 tablespoons (28g) unsalted butter
  • 1 medium onion, finely diced (about 1 cup)
  • 3 cloves garlic, minced
  • ⅓ cup (80ml) pure maple syrup
  • 1 cup (240ml) chicken broth
  • ¾ cup (180ml) heavy cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
  • Salt and freshly ground black pepper to taste

Instructions

    1. Pat chicken dry with paper towels and season both sides with salt and pepper.
    2. Heat olive oil in a large skillet over medium-high heat. Add chicken and sear until golden brown, about 4-5 minutes per side. Transfer to a plate.
    3. Reduce heat to medium and add butter to the same skillet. Once melted, add diced onions and cook until softened, about 3-4 minutes.
    4. Add minced garlic and cook until fragrant, about 30 seconds.
    5. Pour in maple syrup and stir, scraping up any browned bits from the bottom of the pan. Let bubble gently for about 2 minutes.
    6. Add chicken broth and bring to a simmer. Let reduce by about one-third, approximately 5 minutes.
    7. Reduce heat to medium-low and slowly stir in heavy cream and Dijon mustard. Add thyme leaves and simmer gently for 3-4 minutes until slightly thickened.
    8. Return chicken and any accumulated juices to the skillet. Simmer together for 5-7 minutes until chicken is completely cooked through (165°F/74°C internal temperature).
    9. Serve hot, spooning sauce generously over the chicken.
