Creamy Chicken Pasta

  1. For the Chicken:

    • 1.5 lbs (680g) boneless, skinless chicken breasts
    • 2 tablespoons olive oil
    • 1 teaspoon salt
    • ½ teaspoon black pepper
    • 1 teaspoon dried Italian herbs
    • 2 garlic cloves, minced
  2. For the Pasta:

    • 1 lb (454g) fettuccine or linguine
    • Salt for pasta water
    • 2 tablespoons olive oil
  3. For the Creamy Sauce:

    • 2 tablespoons butter
    • 4 garlic cloves, minced
    • 1½ cups (360ml) heavy cream
    • 1 cup (240ml) chicken broth
    • 1 cup (100g) freshly grated parmesan cheese
    • ½ teaspoon salt
    • ¼ teaspoon black pepper
    • ¼ teaspoon red pepper flakes (optional)
    • ¼ cup fresh parsley, chopped

Instructions

  1. Prepare the chicken:
    • Pat chicken breasts dry
    • Season with salt, pepper, and Italian herbs
    • Mince garlic
  2. Cook the chicken:
    • Heat olive oil in a large skillet
    • Cook chicken 6-7 minutes per side
    • Ensure internal temperature reaches 165°F (74°C)
    • Remove and let rest
    • Slice into strips
  3. Cook the pasta:
    • Bring large pot of salted water to boil
    • Cook pasta according to package instructions
    • Reserve 1 cup pasta water
    • Drain pasta
  4. Prepare the creamy sauce:
    • In the same skillet, melt butter
    • Add minced garlic, sauté 1-2 minutes
    • Pour in heavy cream and chicken broth
    • Simmer 3-4 minutes
    • Gradually add parmesan cheese
    • Season with salt, pepper, red pepper flakes
    • Add fresh parsley
  5. Combine:
    • Add cooked pasta to sauce
    • Toss to coat
    • Add sliced chicken
    • If needed, use reserved pasta water to adjust consistency
