For the Chicken:
- 1.5 lbs (680g) boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried Italian herbs
- 2 garlic cloves, minced

For the Pasta:
- 1 lb (454g) fettuccine or linguine
- Salt for pasta water
- 2 tablespoons olive oil

For the Creamy Sauce:
- 2 tablespoons butter
- 4 garlic cloves, minced
- 1½ cups (360ml) heavy cream
- 1 cup (240ml) chicken broth
- 1 cup (100g) freshly grated parmesan cheese
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional)
- ¼ cup fresh parsley, chopped
Instructions
- Prepare the chicken:
- Pat chicken breasts dry
- Season with salt, pepper, and Italian herbs
- Mince garlic
- Cook the chicken:
- Heat olive oil in a large skillet
- Cook chicken 6-7 minutes per side
- Ensure internal temperature reaches 165°F (74°C)
- Remove and let rest
- Slice into strips
- Cook the pasta:
- Bring large pot of salted water to boil
- Cook pasta according to package instructions
- Reserve 1 cup pasta water
- Drain pasta
- Prepare the creamy sauce:
- In the same skillet, melt butter
- Add minced garlic, sauté 1-2 minutes
- Pour in heavy cream and chicken broth
- Simmer 3-4 minutes
- Gradually add parmesan cheese
- Season with salt, pepper, red pepper flakes
- Add fresh parsley
- Combine:
- Add cooked pasta to sauce
- Toss to coat
- Add sliced chicken
- If needed, use reserved pasta water to adjust consistency
