  • 6 large eggs, scrambled
  • 6 slices of bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/4 cup diced onion (optional)
  • 1/4 cup diced bell pepper (optional)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 tablespoon parsley (optional, for garnish)

Instructions

  1. Prepare the Filling: In a large skillet, cook the bacon over medium heat until crispy. Remove from the skillet and crumble it into small pieces. In the same skillet, heat olive oil and sauté the diced onion and bell pepper until softened. Remove from heat and set aside.
  2. Scramble the Eggs: In a mixing bowl, whisk the eggs and season with garlic powder, smoked paprika, salt, and pepper. Pour the mixture into the skillet and scramble over medium heat until just set. Remove from heat.
  3. Assemble the Pastry: Preheat your oven to 375°F (190°C). Roll out the puff pastry on a lightly floured surface. Place the scrambled eggs, bacon, sautéed vegetables, and cheese in the center of the pastry. Fold the edges over the filling to form a sealed parcel.
  4. Bake the Pastry: Place the filled pastry on a baking sheet lined with parchment paper. Brush the top with an egg wash. Bake for 20-25 minutes, or until the pastry is golden and crispy.
