  • 1 cup sour cream
  • 1 cup shredded cheddar cheese (or your preferred cheese)
  • 1 cup chicken broth
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for sautéing the chicken)
  • Optional: ½ cup breadcrumbs for topping

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Cook the Rice: In a large pot, cook the rice according to package instructions. Set aside once cooked.
  3. Prepare the Chicken: Heat olive oil in a large skillet over medium heat. Cook the chicken breasts until golden brown on both sides, about 5-7 minutes per side. Shred the chicken using two forks and set aside.
  4. Prepare the Broccoli: If using fresh broccoli, steam the florets until tender (about 4-5 minutes). If using frozen, simply thaw the broccoli in the microwave or on the stovetop.
  5. Make the Sauce: In a large mixing bowl, combine the cream of chicken soup, sour cream, chicken broth, garlic powder, onion powder, salt, and pepper. Stir until well combined.
  6. Assemble the Casserole: Add the cooked rice, shredded chicken, and steamed broccoli to the mixing bowl. Stir until everything is evenly coated with the sauce.
  7. Transfer to Baking Dish: Pour the mixture into the prepared 9×13-inch baking dish, spreading it out evenly.
  8. Top with Cheese: Sprinkle the shredded cheddar cheese on top of the casserole. If using, sprinkle breadcrumbs over the cheese for a crispy topping.
  9. Bake: Cover the casserole with foil and bake for 25-30 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
