  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1 cup chicken broth
  • 1 ½ cups heavy cream (or a lighter cream or milk alternative)
  • ½ cup frozen peas
  • ½ cup bell peppers, diced (green or red)
  • ½ cup mushrooms, sliced
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Optional: 1 tablespoon brandy or sherry for added depth of flavor
  • Optional: Rice, pasta, or puff pastry shells for serving

Instructions

  1. Prepare the Chicken and Vegetables: If not using leftover chicken, cook the chicken breasts until fully cooked, then shred or dice. In a large skillet, sauté the bell peppers, mushrooms, and peas until tender. Set aside.
  2. Make the Creamy Sauce: In a medium saucepan, melt the butter over medium heat. Add the flour and whisk constantly to form a roux. Slowly add the chicken broth while continuing to whisk to avoid lumps. Stir in the heavy cream and continue to cook until the sauce thickens, about 5-7 minutes.
  3. Combine the Ingredients: Add the cooked chicken and sautéed vegetables to the sauce. Stir gently to combine and coat everything evenly. Season with garlic powder, onion powder, salt, and black pepper. If you’re using brandy or sherry, add it to the sauce at this point for added depth of flavor.
  4. Simmer and Serve: Allow the sauce to simmer for 2-3 more minutes until everything is heated through. Serve the Chicken a la King over rice, pasta, or in puff pastry shells. Garnish with fresh parsley and serve immediately.
