- 1½ pounds (680g) sirloin steak, cut into 1-inch cubes
- 2 tablespoons (30ml) olive oil
- 4 tablespoons (56g) unsalted butter
- 6 garlic cloves, minced (about 2 tablespoons)
- 2 tablespoons Cajun seasoning
- 1 teaspoon salt (adjust if your Cajun seasoning contains salt)
- ½ teaspoon freshly ground black pepper
- 1 tablespoon fresh lemon juice
- 2 tablespoons fresh parsley, chopped
- ½ teaspoon red pepper flakes (optional, for extra heat)
Instructions
- Pat steak cubes completely dry with paper towels. Combine Cajun seasoning, salt, and black pepper in a small bowl. Sprinkle over steak bites and toss to coat evenly. Let sit at room temperature for 5-10 minutes.
- Heat a large cast-iron skillet over high heat until very hot, about 2 minutes. Add olive oil and swirl to coat the pan.
- Working in two batches, add half the steak bites in a single layer. Sear undisturbed for 45-60 seconds, then flip and cook another 30-45 seconds for medium-rare. Transfer to a plate and repeat with remaining steak.
- Reduce heat to medium-low and return all steak bites to the skillet. Add butter and minced garlic, stirring constantly as butter melts, about 1 minute.
- Add lemon juice and toss to combine. Remove from heat and sprinkle with fresh parsley and red pepper flakes if using. Toss once more and serve immediately.
