  • 2¼ cups (281g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (226g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • ¾ cup (150g) packed brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1½ cups (255g) butterscotch chips, divided
  • 1 cup (170g) toffee bits, divided
  • ½ cup (85g) semi-sweet chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper and lightly spray with cooking spray.
  2. In a medium bowl, whisk together flour, baking soda, and salt; set aside.
  3. In a large bowl, cream butter and both sugars with an electric mixer for 2-3 minutes until light and fluffy.
  4. Beat in eggs one at a time, then mix in vanilla extract, scraping down bowl as needed.
  5. Gradually add flour mixture to wet ingredients, mixing on low just until combined.
  6. Fold in 1¼ cups butterscotch chips, ¾ cup toffee bits, and chocolate chips (if using) with a rubber spatula.
  7. Press dough evenly into prepared pan. Sprinkle remaining butterscotch chips and toffee bits on top, gently pressing them into the surface.
  8. Bake for 25-30 minutes until edges are golden brown and center is set with a few moist crumbs when tested.
  9. Cool in pan for 15 minutes, then use parchment to lift bars out onto a wire rack to cool completely.
  10. Cut into squares and store in an airtight container for up to 5 days.
