- 2¼ cups (281g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup (226g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- ¾ cup (150g) packed brown sugar
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 1½ cups (255g) butterscotch chips, divided
- 1 cup (170g) toffee bits, divided
- ½ cup (85g) semi-sweet chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper and lightly spray with cooking spray.
- In a medium bowl, whisk together flour, baking soda, and salt; set aside.
- In a large bowl, cream butter and both sugars with an electric mixer for 2-3 minutes until light and fluffy.
- Beat in eggs one at a time, then mix in vanilla extract, scraping down bowl as needed.
- Gradually add flour mixture to wet ingredients, mixing on low just until combined.
- Fold in 1¼ cups butterscotch chips, ¾ cup toffee bits, and chocolate chips (if using) with a rubber spatula.
- Press dough evenly into prepared pan. Sprinkle remaining butterscotch chips and toffee bits on top, gently pressing them into the surface.
- Bake for 25-30 minutes until edges are golden brown and center is set with a few moist crumbs when tested.
- Cool in pan for 15 minutes, then use parchment to lift bars out onto a wire rack to cool completely.
- Cut into squares and store in an airtight container for up to 5 days.
