- 2 large chicken breasts
- 8 oz pasta (spaghetti, penne, or your preferred variety)
- 2 tablespoons olive oil (for the dressing)
- 3 medium tomatoes, diced
- 1/4 cup fresh basil, chopped
- 1 clove garlic, minced
- 1 tablespoon balsamic vinegar
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 cup grated Parmesan cheese (optional)

- Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving a little bit of pasta water to help the sauce come together.
- Prepare the Bruschetta Topping: While the pasta is cooking, dice the tomatoes and place them in a large bowl. Add the chopped basil, minced garlic, balsamic vinegar, salt, and pepper. Stir to combine and let the mixture sit for at least 10 minutes to allow the flavors to meld.
- Cook the Chicken: Heat 1 tablespoon of olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper on both sides. Cook the chicken for about 6-7 minutes per side, until golden brown and cooked through. Once done, remove the chicken from the skillet and let it rest for a few minutes before slicing it into thin strips.
- Assemble the Dish: In the same skillet, add the cooked pasta and toss it with a tablespoon of olive oil, some of the reserved pasta water, and a pinch of salt and pepper. Once the pasta is well-coated, transfer it to serving plates.
- Top with Bruschetta and Chicken: Spoon the bruschetta mixture generously over the pasta, followed by the sliced chicken. Sprinkle with grated Parmesan cheese if desired, and garnish with additional basil.
