  • 2 cups elbow macaroni (or your favorite pasta)
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 ½ cups shredded mozzarella cheese (optional)
  • ½ cup grated Parmesan cheese (optional)

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside.
  2. Cook the beef: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic and sauté for 2-3 minutes until softened. Add the ground beef and cook, breaking it apart with a wooden spoon, until browned and cooked through, about 6-8 minutes. Season with salt, pepper, oregano, and basil.
  3. Make the sauce: Add the tomato sauce and diced tomatoes to the skillet with the beef. Stir well and bring the mixture to a simmer. Let it cook for 15-20 minutes, stirring occasionally, to allow the flavors to combine and the sauce to thicken.
  4. Combine pasta and sauce: Add the cooked pasta to the skillet with the sauce. Stir well to combine, ensuring the pasta is evenly coated in the sauce.
  5. Optional baking step: If you prefer a baked version of Beefaroni, transfer the mixture to a greased baking dish. Sprinkle the mozzarella and Parmesan cheese on top, then bake in a preheated oven at 350°F for 15-20 minutes, or until the cheese is melted and bubbly.
  6. Serve: Serve the Beefaroni immediately, garnished with extra Parmesan cheese or fresh herbs if desired.
