  • 8 oz. egg noodles (or chow mein noodles)
  • 1 lb flank steak, thinly sliced against the grain
  • 2 tablespoons vegetable oil (for stir-frying)
  • 1 small onion, thinly sliced
  • 1 small bell pepper, thinly sliced
  • 1 cup snow peas
  • 1 small carrot, julienned
  • 3 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • Optional garnishes: green onions, sesame seeds

Instructions

  1. Cook the noodles: Bring a large pot of salted water to a boil and cook the noodles according to the package instructions. Drain the noodles, then toss them with a little sesame oil to prevent them from sticking together. Set aside.
  2. Prepare the beef: Heat a wok or large frying pan over high heat. Add 1 tablespoon of vegetable oil. Once hot, add the thinly sliced beef in batches, stir-frying for 2-3 minutes until browned. Remove the beef and set aside.
  3. Sauté the vegetables: In the same pan, add the remaining oil. Add the onions, bell peppers, snow peas, and carrots. Stir-fry for 3-4 minutes, until the vegetables are just tender but still crisp. Add the garlic and ginger, and cook for another 30 seconds until fragrant.
  4. Combine the noodles and beef: Add the cooked noodles and beef back to the pan with the vegetables. Stir to combine.
  5. Make the sauce: In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, sesame oil, and sugar. Pour the sauce over the beef and noodles, tossing everything to coat evenly. Cook for another 2-3 minutes, allowing the sauce to thicken slightly.
