  • 2 cups all-purpose flour

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter (melted)
  • 2 apples (peeled, cored, and chopped into small pieces)

For the Glaze:

  • 1 cup powdered sugar
  • 12 tablespoons milk (or more, to achieve desired consistency)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare the Fritter Dough: In a large mixing bowl, combine the flour, baking powder, cinnamon, nutmeg, salt, and sugar. In a separate bowl, whisk together the milk, eggs, vanilla extract, and melted butter. Add the wet ingredients to the dry ingredients and stir gently until just combined.
  3. Add the Apples: Gently fold the chopped apples into the dough until they are evenly distributed. Be careful not to overmix.
  4. Scoop the Dough: Using a spoon or ice cream scoop, drop spoonfuls of the fritter dough onto the prepared baking sheet. Space them about 2 inches apart, as they will spread slightly during baking.
  5. Bake the Fritters: Bake the fritters for 15-20 minutes, or until they are golden brown and slightly crispy on the edges. You can check for doneness by inserting a toothpick into the center of a fritter—it should come out clean when they are ready.
  6. Make the Glaze: While the fritters bake, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract in a small bowl. Adjust the amount of milk to achieve your desired glaze consistency.
  7. Glaze the Fritters: Once the fritters are done baking, remove them from the oven and let them cool for a few minutes. Drizzle the glaze over the fritters, allowing it to melt and soak into the warm fritters.
